Les Hauts de Bonaguil is a still red wine, produced with the emblematic Beaujolais grape variety: Gamay. The vines, planted in 1989 on a plot of 1.3250 ha, flourish on a soil composed of flint, siderolithic sands and ferruginous clay.
The grapes are harvested manually in September and stored in small crates then carried to the vatting room. The grapes are vatted by gravity and manually by successive layers of whole clusters and seeded berries. Semi-carbonic maceration takes place for seven days. Then comes the time for pneumatic pressing, a technique ensuring a consistent wine quality. The making and ageing of pressed juices are processed at low temperature, using thermoregulated stainless-steel vats, and on very fine lees. Our wine is entirely natural, without the addition of sulphites, just as Mother Nature intended.
